Program Description:
The workforce training classes will be taught by Madison Park vocational educators in the school's industrial kitchen. The BPS in collaboration with SnapChef instructors will contextualize the curriculum. Language instruction, civics education, and workforce preparation will be taught in the ESOL classes that are contextualized for culinary arts. In the technical skills training component, students will study health and safety policies, procedures, regulations, and practices, including the proper receiving, sorting, prepping, serving, and cooling, of food items, and the maintenance of equipment. The cooking classes will include: menu planning; meat, poultry, and vegetable identification and preparation; the production of soups, stocks, and sauces; and, introduction to dining room service and management. The baking classes will focus on classical pastries, plating desserts, cake decoration, and the production of mini pastries. At the end of the program, students will have the credentials and skills needed for successful employment in a variety of kitchen settings.
